Last day of class at UCD

The students presented their website to the staff of the UCD Summer program. They talked about their stories, were animated in their descriptions, and made me quite proud of them and their accomplishments. After class I met up with Maruja (my former graduate student who lives in Dublin) and we had lunch and talked and talked. She is from Curacao as is two others who were close to my daughter when they were at UGA. We are planning a reunion in 2018. I can’t wait to see these ladies again with their grown up families. That is one of the joys of traveling, being able to connect physically with people you have known so long. We have a closing dinner tonight at O’Connells, a traditional Irish restaurant about 8 stops on the bus line from campus. The menu has a first course, main and dessert with coffee or tea. We get to choose from the following:

First Course: Toonsbridge Fior di Latte Mozzarella Caprese Salad, Avocado & Prawns Pot, Kelly’s of Newport Grilled Black Pudding, Soup of the Day, and Firehouse Bakery Focaccia Garlic Cubes.

Mains with vegetables: Josperised (Josper charcoal oven) half Irish Roast Sizzle Chicken, Rebel 100% Irish Beef Burger, Irish Waters Fish ‘n Chips, Josperised Vegetable Salad.

Dessert: Summer Cream Meringues with Wexford Blackcurrent Fool, Warm Tipperary Apple Crumble, Vanilla Custard, Dark Chocolate Mousse, Bourbon Vanilla Ice Cream.
